This is such a great summer salad. Nothing beats cucumbers for cool, refreshing, salad-y goodness. And the dressing balances the sweet and sour just right. Mmmm.
I would only say this — if you know cucumbers at all, you know they don’t hold up well under salad dressing for too long before getting a little limp and floppy. This is best served fresh. If you’re making it just for yourself and are afraid you might have too much, maybe dish yourself some cucumbers first and then the dressing and save the extra in separate containers. But if you’re bringing this to a picnic or a party, I wouldn’t worry. You won’t have leftovers.
Ingredients
- 1 Tb sugar
- 1 c sour cream
- 3 Tb grated onion
- 2 Tb white vinegar or lemon juice
- 4 1/2 c peeled, sliced cucumbers (about 6 cukes)
Instructions
- Combine sugar, sour cream, onion, and vinegar in a large bowl.
- Add cucumbers, mix well, and serve.
