Can I just share something here? We rocked the first two days of school. Lunches packed the night before. Everyone up early and ready to go. Girls with their hair done all cute-like. We were early. Boo-yah.
How long can we keep this going, you ask? About 45 more minutes, when everyone will wake up for Day 3 and discover we have no milk or eggs and I think we’re out of bread. At least one kid will streak to the basement half-naked where, I fervently pray, he will find a clean pair of underwear in the dryer.
Evenings can be just as nuts, especially now that after-school activities are starting back up. And to that end, I’ve got a few tried-and-true dinner recipes that are good, simple, and quick to prepare (some of them are crock-potted, but you only have to spend a wee bit of time prepping things.) Also? Good for you. Easy healthy dinner recipes. Boo-yah, indeed.

We just got a slow cooker in January, and we love it! Our other favorite meal for times when we will be busy before dinner but have a few minutes for advance prep is Honey Baked Lentils baked along with sweet potatoes or squash.
