I just barely finished putting in my vegetable garden. It’s going in late this year, and between our short growing season and the massive hailstorm we had last night, I probably won’t see a single tomato out there.
My cilantro, though? Going like crazy already. I’d tell you how I did it, but I have no idea. It just came back from last summer and took over half the veggie bed. I am The Cilantro Whisperer.
So I need some cilantro recipes. I have this dressing recipe, which is hugely good and you should make some and put it on everything except your breakfast cereal. But I need more.
I made Italian pasta salad and threw some cilantro in there, and it turned out really well. The great thing about pasta salad is that you can throw in the ingredients you have on hand and skip the ones you don’t and it still turns out good (except for maybe the pasta. That’s kind of key.) And you can serve it up as a main dish, or as a side at a barbeque or something. So flexible and low maintenance, pasta salad.
- 4 c dry noodles
- 1 diced purple onion
- 1 diced green pepper
- 1 diced cucumber
- 2 diced tomatoes
- 1/2 c sliced olives
- 1 Tb cilantro, chopped
- 1/2 c Zesty Italian salad dressing
- salt & pepper to taste
- Cook pasta according to package directions. Cool.
- In a large bowl, combine vegetables and cilantro and toss gently.
- Pour Italian salad dressing over the top, toss to coat.
- Chill and serve.
