I have one more snack to add to yesterday’s list. Blueberry parfaits — great as an after-school snack…or as breakfast (we were getting a little tired of cold cereal every morning.)
I use homemade granola (my favorite recipe is this one). And while I like to use blueberries, you can really use any berry or soft fruit. We like Greek yogurt for a little extra protein, but any kind will work, of course. And make up the parfaits the night before and keep in the fridge, or have the kids make them up in the morning — they’re that simple.
- vanilla yogurt
- frozen or fresh blueberries
- If blueberries are frozen, allow to thaw slightly.
- In a small glass, layer yogurt, blueberries, and granola.
- Top with one more layer of yogurt and sprinkle with cinnamon. Serve.
