Welllllll — today’s breakfast was sort of a mini-fail. I kept to one of my criteria and we ate something that was not cereal. But when I sat down and did the math, it actually came out to be slightly more expensive than cereal (especially cereal that’s on sale). It does have more protein and less sugar and it was still a good break for those of us trying to cut a devastating cereal habit. And it will get you at least one and possibly two days of leftovers (so really, this is 6 Days of No-Cereal Breakfasts, not that that excuses me).
1 lb. ground sausage
9 eggs, slightly beaten
3 c milk
1 tsp salt
8 slices of bread, cubed
1 1/2 c grated cheddar cheese
Mix together. Pour into greased 9×13 inch pan. Refrigerate overnight. Bake for 1 hour at 350 degrees. Serves 8-10.
This is also great for things like brunches or Christmas when you want a nice breakfast but don’t want to be slaving away in the kitchen that morning while fun things are happening. This way you can slave away in the kitchen the night before instead. Aren’t you lucky!
This wraps up our five days with no cereal. I’m glad I did it because we were really in a rut. Realistically, I know I won’t be doing this every day…but my goal is to replace two or three days a week with something other than cereal — probably both cheaper and healthier for us all.
