21 Deliciously Tasty, Easy Soup Recipes

January 12, 2017 By Laura 3 Comments

It’s soup week at our house.

Everyone went back to school this week, after a long (looooong) winter break…and every single club or sport or whatever decided they needed to meet right now since no one’s been doing anything for two weeks. Also, Girl Scout cookie season is fast approaching which means lots of meetings and weird acronyms (seriously…so many acronyms for cookie-related things) and probably me crying in my basement at least once before it’s over. But — Thin Mints. So yeay.

So we’ve been running about like crazy and we need our soup. You can make soup mid-day, leave it on low in the crockpot (or just make it in the crockpot in the first place!) and have it later. Soup is warm and comforting. Soup understands your troubles. Soup is there for you when you need it.

21 DELICIOUS

Here are our favorite soup recipes that are on heavy rotation right now.

Slow Cooker Chicken Noodle Soup from Peace but Not Quiet — cure what ails you with a good chicken noodle soup

Beer Cheese Soup from Peace but Not Quiet — a quick, easy soup you can whip up when you realize you’ve forgotten to defrost anything for dinner.

Slow Cooker Chicken Tortilla Soup from Peace but Not Quiet — my family’s favorite. Top it with tortilla chips, avocado, cilantro, sour cream, anything you can possibly think of to throw on there.

We’ve had this Beef Barley Soup from The Food Charlatan and it’s really, really good. There’s a slow cooker version of this recipe at the bottom, and that’s what I use.

We had New England Clam Chowder from Epicurious on Christmas Eve and it’s easy to prepare but tastes really special. A perfect soup when you’re having guests you want to impress but you don’t want to work too hard.

Best French Onion Soup Recipe from Good Dinner Mom — we had French onion soup every Christmas Eve growing up, and I love it.

Restaurant Style Hot Sour Soup from Made it Mommy — I have absolutely no evidence to back this up, but I’m certain that a good hot sour soup helps chase away colds and makes sick people feel better.

Avgolemono Soup from Closet Cooking — a delicious Greek lemon chicken soup when you want to try out different flavors and experiment a little.

Italian Vegetable Soup from Carlsbad Cravings — a great comfort meal. You can throw your veggies in along with everything else in one big pot. Yum.

Chicken Pot Pie Soup from Kitchen Dreaming — I do love my chicken pot pie. Eating it with a spoon? Awesome.

soup recipes

Crock Pot Cheeseburger Soup from Life in the Lofthouse — another great comfort food

Quick and Easy Homemade Pho from The Girl on Bloor — pho is another one I swear makes me feel better when I’m stuffed up and yucky. If you’ve never tried this Vietnamese soup, definitely put it on the radar. My kids love it.

20-Minute Chicken Parmesan Soup from Chelsea’s Messy Apron — quick and low-key. Great for busy nights!

The Best Detox Crockpot Lentil Soup from Pinch of Yum — I so need this after too many Christmas treats (and…perhaps…too many Christmas cocktails.) Bring on the detox!

Roasted Sweet Corn and Tomato Soup from Our Best Bites — this is actually on the menu for lunch today. I can’t wait.

Healthy Buffalo Chicken Soup from Nerdy Foodie Mom — I’m planning on this when we watch The Super Bowl in a few weeks

Potato Corn Chowder from Lemon Blossoms — nothing like a good, thick chowder on a chilly evening. With some fresh warm bread? Heaven.

Slow Cooker Butternut Squash Soup from Gimme Some Oven — you can feel good about this one because squash is a vegetable. Right?

Crock Pot Green Chile Enchilada Soup from Lil’ Luna — we weren’t big green chile people until we moved to Colorado…people here love it and now we’re hooked.

One Pot Beef Stroganoff Soup from Bellyful — a good, hearty soup

Creamy Chicken Tortellini Soup from A Spicy Perspective — we’ve been making a lot of tortellini soups lately. We love the tortellini from Trader Joe’s, if you have one of those near you. So yummy!

This is a great list! The thing I started making from scratch was chocolate syrup. Best chocolate milk ever!
