I’ve been making caramel corn as an after-school snack since I was in high school. It’s so dang good. Recently, I added the chocolate…because if you can add chocolate to something, well why wouldn’t you? I think it still makes a good snack for the kids because there’s a little sweetness in there but it’s not so much sugar that you’re going to get them hyped up and then yell at them to do their homework.
So here’s what you do:
Begin with 2 c of popped popcorn. Spread popcorn in a 13×9 casserole pan.
In a small saucepan, combine 1/4 c butter and 1/4 c brown sugar.
When butter is totally melted and mixed with brown sugar, pour mixture over popcorn. Stir popcorn so it’s thoroughly coated. Bake at 350 degrees for 10 min.
Now. You can just stop here, fill your bowl with tasty caramel corn and enjoy. Orrrrrrr, you can add chocolate. Exactly. Add the chocolate.
Pour 1/2 c chocolate chips into a small bowl. Microwave 15 seconds, remove the bowl and stir. Repeat until your chocolate is totally melted.
Drizzle melted chocolate over the caramel corn and let cool and harden (or eat it hot, make a huge chocolatey mess and possibly burn your tongue. I’m right there with you.)
