Every Friday night at our house is Breakfast For Dinner Night. It started when my oldest was little, just as a way to make dinner a little easier and to kick off the weekend with something out of the ordinary. One week my husband wasn’t home, and my son and I spread a blanket on the living room floor, put on a movie, and ate waffles.
It’s now a tradition going on eleven years. I’m hoping when the kids go off to college, they’ll try to make it home for Friday night breakfast and movie time.
The funny thing is, I didn’t start this intending to begin a family tradition. Sometimes I think we make things hard on ourselves. We can have simple, uncomplicated family traditions that don’t require lots of dishes and cooking and stress. And maybe they’re the things things our kids remember most — things like fun, no-hassle Friday evenings when we break all the rules and eat dinner on the floor in front of a movie.
We tried these Jimmy Dean’s flatbread breakfast sandwiches this week, and the kids have voted them into Friday night dinner rotation. They were a huge hit. I was a little afraid my preteen son would want more than one, which would throw everything off because there are four and we have four kids and…actually he was fine. I think the protein from the egg and sausage was filling enough that he was quite happy with his meal.
Here’s what we had:
Brown Sugar Topping — 4 Tb brown sugar, 1 tsp cinnamon, and 1/4 c raisins — mix together and sprinkle over sliced apples
